La Galbi (Korean Bbq Short Ribs) with Oven

Since no dining out, I have been wondering if I can make LA GALBI at home without using grill, as I don’t have a good and easy to use grill in my house.

After a couple of tries, I am quite happy with the results. The recipe below works both for wok fry and oven. I personally prefer oven, as it can make a big batch and is easy to clean. If you only make a small batch, wok also works.

Making the sauce from scratch (or use pre-made ones):

  • 2/3 cup chicken broth or water
  • 2/3 soy sauce
  • 1/2 cup sugar
  • 1/3 cup rice wine, such as soju or vodka
  • 2 tbsp sesame oil
  • 1tbsp houston sauce (opt)
  • 1tsp black pepper
  • minced garlic, chopped scallions
  • 1/2 kiwi paste

Kiwi helps making the meat tender. You can also add other fruits, such as apple or pear paste if you like more fruit flavor.

The sauce above is enough for marinating 15 ~20 short ribs. I use a zip bag to marinate the ribs for about 2 hours.

Oven preheat to 400f.

Protect your baking pan with foil. Use a cooking rack to let the oil and sauce drip white baking. Alternatively, you can fold a piece of foil like a paper fan to use for draining.

Bake for ~10 minutes, flip the meat in the middle. Broil each side 1~2 minutes. Adjust the time based on your oven and your preference.

Egg tart and Pies

Freshly baked egg tart, smells so good and tastes so good 😘

Bonus, the same dough can be used to make many other cookies, such as Apple Pie, Banana Pie, Sweetheart cake (I like this translation. In Chinese this is called 老婆饼),etc.

🍪Making the dough:

  • 1.5 cups all purpose flour
  • 3tbsp butter, softed
  • 100ml water + 1tsp sugar + 1/3 tsp salt
    Mix and knead well.

With a rolling pin, roll into a rectangle shape, spread ~1.5tbsb softed butter evenly on top. Fold vertically for 3 layers, then fold horizontally for 3 layers (see pictures). Wrap in food wrapper, let it chill in the fridge for half an hour.

🏃‍♀️During this time, you can get some exercise and then come back 😉

🍪Take the dough out, gently press it to make it 2x of the size, then roll to a rectangle shape again. This time the shape is more narrow. spread ~1.5tbsb softed butter evenly on top. Fold horizontally for 3 layers (see pictures). Wrap in food wrapper, let it chill in the fridge for half an hour.

💃Go and relax for half an hour 🙂

🍪Take the dough out again. Similar as last step, gently roll it to a rectangle shape. This time wider and thiner.

Now you have two choices: use the dough all for egg tart (making ~18 tarts) or half egg tart half cookies. I chose the later. Cut the dough vertically to 2 piece. Half of it spread butter, and then roll it to a cylinder; the other half also spread with butter, and then fold horizontally for 4 layers. Wrap in food wrapper, let it chill in the fridge for an hour.

🧑‍🍳During this time, don’t go and relax, we need to prepare the filling:

🍥For the Sweetheart cake:

  • ~half cup well cooked red beans, slightly pressed.
  • 2tbsp sugar
  • 1tbsp butter
  • 2tbsp flour
    Mix well and let it chill in the fridge.

🥚For the egg tart:

  • 4 egg yolks
  • 1/4 cup sugar (this amount makes a not very sweet taste, you can add more or less based on your preference)
  • 3tbsp startch
    Mix well.

In a sauce pot, boil 1cup heavy cream, 2/3 cup milk, 1 tsp vanilla extract. Watch the side of the pot, when you see bubbles starting to come out, turn off the heat. Don’t let it boil!

Pour the hot cream into the egg mix, mix well. Transfer the egg mix to a larger measure cup or some other container that is easy to pour the mix to egg tart mold later, using a sieve to remove the lumbs. Let it chill in the fridge.

🍌Prepare the banana filling at the last because of color change:

  • simply cup a banana to small pieces, and 1tsp sugar.

⌛Baking Time!

Preheat oven to 375f, roast setting (both up and bottom heat).

🥚For the egg tart:

  • Cut the dough to 9 pieces (for 2.6 inch egg tart molds, adapt according based on your mold size)
  • Put each piece in a mold. Use your fingers to gentally press and shape it to fit in the mold.
  • Pour the egg mix to each egg tart mold, fill about 85%
  • Bake for 25 minutes (may need to adjust based on your oven)

🍥🍌For the pies:

  • Roll the dough to rectangle shape again.
  • Cut out ~12 circle shapes
  • Make 6 sweetheart pie and 6 banana pie.
  • Brush with egg yolk, spread some sesame seeds.
  • Bake for 15 minutes (may need to adjust based on your oven)

😍 Time to enjoy!

If you can’t finish, the next day you can simply heat oven to 350f, and back for ~4 minutes.

Salmon Gravlax

This recipe takes 2~3 days to cure the salmon, but it’s quite simple to make. If you like cured salmon, it’s worth giving it a try.

⏳Day 1

  • 1 lemon, half a grapefruit (opt), squize out the juice and put aside
  • sugar: salt 2:1, I used 1/2 cup sugar, 1/4cup salt, a bit lemon zest, a bit grapefruit zest, 1/2 tsp grounded black pepper, half of the juice from the first step, mix well
  • salmon pat dry
  • put the remaining half portion of the juice on a plate first, then place the salmon, rub the mixture in step 2 on the salmon.
  • if you like, you can also cut the lemon and grapefruit skin to small pieces and spread on top (opt)
  • wrap it with food wrap, put something heavy on top, and let it chill in the fridge for 1~2 days

⏳Day 2 or 3

  • take the salmon out, remove the marinade, wash slightly and pat dry.
  • brush honey mustard on top
  • chop dill and spread on top
  • let it chill in the fridge for one more day

⌛ Day 3 or 4


Ready to enjoy 😋

  • slice the salmon to thin slices. Wow, what a beautiful color😍
  • you can enjoy it alone, with a cup of wine, make hand sushi roll, put it on bagels, … Your choice 👍

BBQ Pork (叉烧肉)

One very popular Chinese dish BBQ Pork (叉烧肉). It’s actually quite easy to make 🙂

Choose pork with a bit more fat, such as pork shoulder。I happen to have a piece of pork presa(松阪肉) at home. I know, its too good for bbq 🙂, but special time, use whatever you have 👍

Easy Recipe:

  • 3tbsp soy sauce, 1 tbsp oyster sauce, 1.5tbsp rose wine or rice wine or regular cooking wine, 2~3tbsp honey, 2tsp red yeast rice powder (if you don’t have, can skip), 1/2 tsp black pepper, mix well
  • cut pork to 2~3 inch wide chunks, put them in a freezer bag, add the sauce, add some garlic and ginger slices
  • close the bag. Refrigerat for 1~2 days

I took it out after one day. Now, let’s cook it:

  • preheat oven to 400F
  • put the pork on a bbq rack, and make sure you protect the baking pan well with foil for easy clean (picture 1)
  • mix 2tbsp honey, 2tbsp oil and 2 tbsp soy sauce and 1tsp red yeast rice powder (picture 2)
  • brush the pork with the sauce
  • bake for ~10 minutes, take out, flip, brush sauce on the other side, bake for another ~10 minutes (picture 3)
  • take out, let it cool, cut to thin slices.

Pineapple Fried Rice (菠萝炒饭)

Got many pineapples recently, and working very hard to consume them 😇. Ha, why not make pineapple fried rice, one stone two birds: dinner and pineapple 🙂

This is a very simple recipe. Here are the ingredients I used, but you can replace many things with what you have:
– 3 eggs + a bit salt, beat and fry, put aside
– Shrimp and/or chicken, fry, add a bit white pepper and salt, put aside
– Fry vegetables, I used carrots, mushroom, onion, a bit garlic and green onions
– Add ~2 bowl of cooked rice, fry for 2 mins, season with salt and a bit sugar.
– Add the eggs, shrimp and/or chicken
– Spoon to the pineapple, add a bit crushed peanuts and parsley (opt.)
– Enjoy!
