Fruity Panna Cotta

Let’s make some beautiful Panna Cotta with fruits today! The recipe I include here is lighter, but it’s healthier and great for summer time🙂

👩‍🏫General guidance:

  • milk: cream 1:2. Milk can be cow milk, coconut milk, almond milk. Cream is heavy whipping cream, can also substitute some with yogurt or sour cream.
  • liquid : gelatin 3cups : 3.5 silver gelatin sheets or 1 bag of gelatin powder.
  • I like to use gelatin sheets, it’s much simpler to melt.

🍮Panna Cotta Base:

  • 1 cup milk, ~2 tbsp sugar, bring it to boil, then turn off stove.
  • Put 3.5 gelatin sheets in cold water till soft (less than 5 minutes). And stir them into the milk (hot but not boil).
  • Add 2 cups of whipping cream, mix well.
  • Pour the liquid to cups: if you want to make an angled shape like I show in the pictures, use a shallower baking cup or muffin pans to keep your cup tilted.
  • put in fridge for~2 hours.

That’s the Panna Cotta base. Then you can be creative for the toppings. Here are a few ideas:

  • Fresh fruits
  • Fruit jams: it’s more tasty with fresh made fruit jams. You can use strawberries, blue berries, or cherries, for example, add some sugar and boil till thick (~15 minutes).
  • Make another fruit jelly layer: I tried two flavors, mango and grapefruit, this time.

Note that if you want to add a fruit jelly layer, you can do it after refrige the Panna Cotta base for about an hour, not 2 hours.

🥭Recipe to make the mango jelly:

  • 3 mangos, make ~1.5 cups mango puree.
  • 2 gelatin sheets softed in cold water.
  • half cup mango juice or water, microwave for 40 seconds, and stir in the gelatin sheets to dissolve.
  • Add the gelatin liquid to the mango puree, mix well.
  • Pour the mixture on top of the Panna Cotta base. Shape it to the design you like.
  • Refrige for another 2 hours

🍊Recipe to make the grapefruit jelly:

  • ~2 grapefruits, peel and get the flesh. Yeah, that takes some work.
  • slightly mesh it. This should roughly give you 1.5 cups juice with pulps. Add 1tbsp sugar
  • 2 gelatin sheets softed in cold water.
  • half cup grapefruit juice or water, microwave for 40 seconds, and stir in the gelatin sheets to dissolve.
  • Add the gelatin liquid to the grapefruit puree, mix well.
  • Pour the mixture on top of the Panna Cotta base. Shape it to the design you like.
  • Refrige for another 2 hours
